The Ultimate Chicken & Bacon Mayo Sandwich

Ditch those pre-made sandwich fillers, try this tasty combo. This one really is a sandwich show stopper! This recipe is made with our Smoky Paprika, Cumin & Chilli Plant Based Mayonnaise, but you can use any jar of your favourite Charlie & Ivy's Mayonnaise.

Serves 2

INGREDIENTS

1 ciabatta loaf, around 200g

1 baby gem lettuce

1 beef tomato, sliced

1 chicken breast, cooked

4 rashers of smoked streaky bacon, cooked

2 spring onions

1 small bunch of flat leaf parsley

1 small bunch of chives

1 stick of celery

3-4 tbsp of your favourite Charlie & Ivy's Mayonnaise, we used Smoky Paprika, Cumin & Chilli Plant Based Mayonnaise

Salt and freshly ground pepper, to season

METHOD

Start by shredding your cooked chicken and chopping your bacon. Add to a mixing bowl. Finely chop your spring onions, parsley, chives and celery and also add to the bowl. Stir together with 3 tbsps of your mayonnaise until fully combined. Season to taste.

Cut your ciabatta in half horizontally, and lightly toast. Spread a thin layer of mayonnaise on the bottom slice. Then layer up with your lettuce leaves and tomato slices. Finally add the chicken and bacon filling. Top with the top half of the loaf, and cut into two.
