Lemon & Dill Potato Salad (V)

We've teamed up with our friends at Bannisters Farm to bring you the perfect spring potato salad. Fresh, zesty, and made with their delicious Bannisters Farmer's Roasting Potatoes, and our zingy Lemon & Dill Mayo.

Perfect for a spring dinner party, Easter feast or firing up the the BBQ, this one's a crowd-pleaser.

Serves 2

INGREDIENTS

800g Bannisters Farm Farmer's Roast Potatoes

3 tbsp Charlie & Ivy's Lemon & Dill Mayonnaise

2 garlic cloves, chopped

Handful of chives, chopped

½ red onion, chopped

4 spring onions, chopped

100g pancetta, fried until crisp

Charlie & Ivy's Cold Pressed Rapeseed Oil

Freshly ground salt & pepper

METHOD

Pop your potatoes in the oven or air-fryer and cook until crispy and golden. Whilst cooking, fry your pancetta until crispy and leave to one side.

When the potatoes are fully roasted, toss all the ingredients together in a large mixing bowl until well coated and combined.

Serve the salad warm, or place it in the fridge to chill. Serve and enjoy!
