Croque Monsieur Pancake Stack
The perfect pancake is real treat, and this new recipe is one to bookmark. Layers of pancakes stacked with melted cheese, ham and our Mustard & Ale Mayo. Our take on a Croque Monsieur, just a pancake edition!
We've swapped out the traditional béchamel sauces for our Mustard & Ale Mayonnaise. Simple, creamy and packed with flavour. Try as a tasty brunch or lunch or as a pancake day savoury supper.
Makes 2 stacks
INGREDIENTS
1 free range eggs
1 cup plain flour
1 cup semi skimmed milk
100g mature cheddar, grated
2-3 slices of British ham, sliced into bites sized pieces
2-3 tbsp Mustard & Ale Mayonnaise
A little Cold Pressed Rapeseed Oil
Whisk together your egg, milk and flour to form a smooth batter for your pancakes.
Heat a little of the rapeseed oil in a non-stick pan.
When the pan is hot, pour in enough batter to make a 10-12cm wide pancake. As the pancacke cooks sprinkle on a little of the cheese and ham, and then add a couple of dollops of the Mustard & Ale Mayo. Gently pour over a little more pancake mix to cover the toppings and allow to cook for a further couple of mins.
When ready, carefully flip the pancake to cook the other side. When cooked place on a plate and repeat the process until all the batter is used up. You should end up with 4 stuffed pancakes depending on how large you make them.
When all the pancakes are cooked, place one onto a plate. Spread on some more of the mayonnaise and another scattering of cheese. Pop under the grill to melt the cheese. Once the cheese is melted add another of the pancakes on top to form a stack, repeat by spreading with mayo, cheese and melt under the grill.
Serve stacked with a twist of black pepper and a sprinkling of fresh thyme.
