Smashed Avocado Bagel with Smoky Paprika Mayo

Serves 2

INGREDIENTS

2 seeded bagels

2 ripe avocados

1 tbsp Charlie & Ivy's Smoky Paprika, Chilli & Cumin Plant Based Mayonnaise

½ lime, juiced

Baby tomatoes on the vine

Good drizzle of Charlie & Ivy's Chilli, Balsamic, Oregano & Thyme Bread Dipper

A twist of salt and pepper

A good handful of pea shoots or watercress

METHOD

Pop your tomatoes (still on the vine) onto a baking tray and drizzle with some of your bread dipper. Pop in an oven on 160C / 180C Fan / Gas Mark 4 for around 10 minutes.

Whilst the tomatoes are roasting, mash your avocados with the juice of half a lime, mayonnaise and a good twist of salt and pepper. Split and toast the bagels, place on a dish and pile up with the smashed avocado, a scattering of peashoots, and then top with your roasted tomatoes. Drizzle over the dipper before serving.
