Spicy Roasted Chickpea Salad (V)

A simple salad of roasted chickpeas, carrots and couscous. Perfect as side throughout the year. Made using our Smoked Chilli Dressing.

Serves 6 as a side

INGREDIENTS

Tin of chickpeas (400g), drained

Good drizzle of Cold Pressed Rapeseed Oil

1 tsp turmeric

1 tsp garam masala

½ tsp cumin

¼ tsp chilli powder or flakes

1 cup of couscous

2 carrots, grated

Good glug of Smoked Chilli Dressing

Salt & pepper

METHOD

Pre-heat the oven to 180C. Put the drained chickpeas and spices in a roasting dish, drizzle over the rapeseed oil and season with salt and pepper. Roast in the oven for 20 minutes.

Whilst roasting make up the couscous according to the packet instructions.

Once the chickpeas are cooked, mix with the couscous, grated carrot and add a generous glug of the smoked chilli dressing, along with salt and pepper. Mix together, taste and serve.
