Spicy Roast Veg & Haloumi Pittas (V)
A simple dish that's perfect for lunch and full of flavour with Charlie & Ivy's Smoked Chilli Dressing. You can also try this with your favourite bread dipper. Try a chilli based one, or our Smoked Garlic with Black Peppercorn one.
INGREDIENTS
1 red onion
1 courgette
Couple handfuls of mushrooms
1 red pepper
1 large tomato
1 aubergine
3 cloves of garlic
Block of haloumi, or even give a try with Feta cheese
4 Pitta Breads, toasted and split
Good drizzle of Smoked Chilli Dressing
METHOD
Prep and chop your veg into decent chunks and slice your haloumi thickly. Pop into a roasting dish, drizzle over your dressings / bread dipper oil, and roast in a hot oven for 25 mins, and then cram into toasted pittas.
